Pressure Cooker Lentil and Sausage Soup

Comfort in a Bowl

There is something comforting about a nice bowl of soup, especially one packed full of vegetables and protein (lentils and other legumes have a lot of protein). Lentil and Sausage Soup has been a favorite in our household for while, and we had long ago made our changes (mainly the addition of bacon) to the original recipe.

My Changes

I decided it was time to make one last change, which is to a Instant Pot (or similar electric multi/pressure cooker such as Go Wise). The addition of bacon really adds the saltiness that the lentils needs to shine, while the parsley brightens everything back up. I hope you enjoy this as much as my family does.
Pressure Cooker Lentil and Sausage Soup

Lentil and Sausage Soup has been a favorite in our household for while, and we had long ago made our changes to the original recipe. I decided it was time to make one last change, which is to a Instant Pot (or similar electric multi/pressure cooker such as Go Wise). Ingredients
Ingredients:
  • 12 oz of smoked sausage quartered and sliced
  • 1/2 lb. bacon sliced
  • 1.5 cup carrots chopped
  • 1.5 cup celery chopped
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 tsp. dried thyme
  • 1/2 tsp. black pepper
  • 1/4 tsp. cayenne pepper
  • 6 cups chicken stock homemade, if available
  • 1 cup of water
  • 2 cups brown lentils
  • 1/2 cup fresh parsley chopped
Instructions
Directions:
  1. Using saute function, start browning bacon in the electric cooker. Once bacon is halfway cooked, add smoked sausage. Continue to cook until bacon is browned, stirring frequently, then cancel saute function. (There will be lots of brown bits stuck to the bottom, but that's okay).
  2. Add carrots, onion, celery, garlic, thyme, black pepper, cayenne pepper, chicken stock, water and brown lentils to inner pot. Stir, scraping the brown bits up off of the bottom of the inner pot. Put on lid and turn venting know to Seal. Using Soup function, cook for 10 minutes with 15 minutes of natural pressure release (basically, let it sit for 15 minutes after cooking before releasing remaining pressure).

  3. Once pressure has fully released, remove lid and stir in fresh parsley before serving.
